1 Point Bran Muffin
2 cups All-Bran cereal
3/4 cup skim milk
1 cup applesauce
2 mashed bananas
1/2 cup splenda
1/2 cup loose brown sugar
1/2 cup whole wheat flour
1/2 cup all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp baking powder

Put milk in microwave until just warm. Add milk to All-Bran. Let sit 5 minutes to soften cereal. Add remaining ingredients. Bake at 325 for 40 minutes.

Makes 12 muffins - 1 pt per muffin

Super Easy Potato Soup
1 pkg Ore Ida "O'Brien" Has Brown Potatoes (with onions and gr peppers)
3 cans 98% fat free chicken broth
1 pkg Country Gravy Mix (you can use jus about any brand)

Put potatoes and broth in large soup pan. simmer and cook 20-25 minutes until potatoes are tender. Mix gravy mix with 1/2 cup water. Use wisk and pour into hot soup. Heat through and serve.

Can top with grated cheese, bacon bits or chopped onions -- but remember to add the extra points.

1 point per cup - makes about 10 cups

Carmel Apple Salad
2 apples diced
1 - 8 oz fat free cool whip
1 - 20 oz can crushed pineapple (drained)
1 pkg sugar free fat free butterscotch pudding
Mix together and chill.

1 cup = 2 pts.

Broccoli Cheese Soup
Ingredients

16 oz bag broccoli florets
16 oz bag broccoli, cauliflower, carrot mixture
6 cups water
5 chicken boullion cubes
10 oz Velveeta Light Cheese
Salt and pepper to taste if desired.

Instructions

Put the first 5 ingredients in a pot and cook for 20 minutes (until warm and soft). Run the mixture through the blender a batch at a time (include the water, it's part of the soup). Return the blended veggie/water/boullion mix back to pot, and add cheese (cut into cubes). Heat until cheese is melted. Add salt and pepper to taste if desired (I didn't add any).

Special Notes

Makes 11 cups, 1 point per cup.

Per cup: 75 calories, 2.3 g fat, 1.7 g fiber.
(I checked the nutritional information and on my points slider, it is 1 point per serving, but almost 2. It may come out to 1.5 points for those using the points calculator. I do know that for 2 cups, it's 3 points.)
